Just three ingredients and you have yourself some quick and easy healthy banana pancakes; put this with some honey-roasted plums, and it’s a simply delicious breakfast.
These pancakes couldn’t be simpler and quicker to make and still packed full of delicious flavour while being light and fluffy. The honey-roasted plums are so juicy and sweet, which brings a punch of flavour that matches deliciously with the pancakes.
You can, of course, use any flour and milk of your choice without affecting the mix. These banana pancakes with honey-roasted plums are the perfect quick breakfast for a slow weekend morning, or they’re so quick to make; they’re even perfect for a weekday to give you the energy you need to get through the day.

Ingredients
Honey Plums:
- 2-3 plums
- 1-2 tbsp honey
- Oil or butter for greasing
Pancakes:
- Two very ripe bananas
- 1 cup rice flour
- 1 cup rice milk
- 1/2 tsp baking powder
- 1 tsp vanilla (optional)
Optional add-ins:
- Blueberries
- Chocolate chips
Method
Honey Plums:
- Preheat the oven to 180.
- Cut plums into quarters and place them in greased baking pan.
- Drizzle with honey.
- Bake for 15 minutes until roasted and juicy, turning halfway through.
Pancakes:
- While plums are roasting, blend the bananas, flour, milk, baking powder and vanilla if used.
- Heat the frying pan with a bit of butter (or oil) and pour batter into the pan to create the desired pancake size you like. I used 1/3 cup each.
- Turn pancakes when they’re starting to bubble all over on top and golden on the bottom.
- Continue with the rest of the batter, re-buttering the pan when necessary. I keep mine warm in the oven while cooking the rest.
- Serve the pancakes topped with your honey-roasted plums and your choices of toppings, such as ice cream or yogurt!
