These Peanut Butter Crunch Bars are my new favourite treat—smooth peanut butter with crunchy cornflakes, sweet maple, and covered in silky chocolate. Wow, I can eat them all day, every day.
I knew these would be good, peanut butter and chocolate, you can’t go wrong, but when I took the first bite, I was amazed at just how good a few ingredients mixed can be. The cornflakes crunch pairs beautifully with the creamy peanut butter and maple syrup, and the sweetness is rounded off by a hint of salt and bitter dark chocolate.
Peanut Butter Crunch Bars are a little healthier but just as, or, I would say, an even more delicious treat, snack, dessert or whatever you want them to be. These peanut butter crunch bars did not last long in my house, so it’s even better that these are super quick and simple to make, with no need to bake and only a few ingredients.

Ingredients

  • 1 cup peanut butter, smooth or medium
  • 1/3 cup maple syrup
  • 1/4 tsp salt
  • 1/4 tsp vanilla
  • 2 1/2 cups cornflakes
Chocolate topping:
  • 1/2-3/4 cups dark chocolate
  • 1/2 tbsp sunflower or coconut oil

Method

  1. Mix and melt the peanut butter and maple syrup in the microwave or double boiler. (This will make it easier to mix in the rest of the ingredients)
  2. Mix in the salt, vanilla and then the cornflakes.
  3. Press into a lined square baking tray, smooth and press down to an even thickness.
  4. Melt together the chocolate and oil.
  5. Pour over the peanut butter mixture and spread evenly.
  6. Place in the fridge until the chocolate has set.
  7. Cut into the desired size and keep refrigerated in an air-tight container.
