These Almond and Date Cookies take less than 30 minutes to make and are a healthier option to satisfy those sweet cravings. Roasted almond butter and sweet sticky dates balance these cookies and bring a lovely soft texture.
I chose to bake these into cookies, but you could roll them into balls and have them as is (remove the baking soda), like almond and date bliss balls, to make them even simpler. Adjust the amount of salt depending on if the almond butter or nut butter you choose is salted. I did not check the first time; it was unpleasant.
This is the first time I’ve used almond butter, which I loved, but usually, I’ve used tahini, which is also delicious. You can choose what spread you prefer. These Almond and Date Cookies are a healthier option for a super quick sweet treat. So simple to make and so delicious.

Ingredients
- 100g rolled oats
- 55g almond flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 125g almond butter
- 80g maple syrup
- 1 tsp vanilla extract
- 60g chopped dates
Method
- Preheat the oven to 180
- In a mixing bowl, stir the oats, almond flour, baking soda, and salt.
- Add the almond butter, maple syrup, and vanilla.
- Mix to form a thick dough.
- Fold in the chopped dates.
- Roll into balls, place on a baking tray lined with parchment paper, and flatten slightly.
- Bake for 8-10 minutes until golden around the edges.
- Remove from the oven and cool for at least 10 minutes.
