I don’t know how to begin describing how good these Blondies are; you must try them yourself. They’re fudgy, with the right amount of chewiness. Topped with caramelised white chocolate chips, gives a beautiful sweet caramel kick.
Also, they’re gluten-free! Of course, you can use other flour, but it’s always nice to have some gluten-free recipes up your sleeve. One of these is never enough. You could go for two or even three squares if you have a huge sweet tooth like me.
These Blondies are an amazing sweet treat and so quick and easy to make any time of day or night, for any occasion. Delicious and fudgy goodness with a beautiful chewy edge, the corner piece is always the first piece I take.

Ingredients
- 180g butter, browned
- 150g white chocolate
- 1 cup brown sugar (200g)
- Two eggs and one egg yolk
- 1 1/2 tsp vanilla
- 1 cup flour; I used gluten-free
- 1/2 almond meal
- 1 tsp salt
- 1/2 cup caramelised white chocolate chips for topping
Method
- Preheat the oven to 180 degrees.
- Line a square baking pan with baking paper.
- Melt butter in a saucepan on medium heat and brown for about 10 – 15 minutes.
- Remove from heat. Add the white chocolate to the browned butter and stir until melted.
- Let the butter-chocolate mixture cool slightly, then beat in the eggs one at a time, then stir in vanilla.
- Sift in dry ingredients and mix until all are combined.
- Pour into the pan top with caramelised white chocolate, and bake for 30 mins.
- Cool in the pan for 5-10 minutes, then on a cooling rack to cool completely, cut into your desired size.
